What is the correct concentration of Stopping Reagent for use in the Amylazyme (T-AMZ) assay?

For fungal and cereal alpha-amylases, use 10 mL or 2% tris base solution (pH ~ 8.5). For bacterial alpha-amylase it is best to use a solution of higher pH (namely, 2% tri-sodium phosphate, pH 11.0), to ensure complete inactivation of the enzyme.
