Can your Azocasein (S-AZCAS) be used to measure acid proteases at pH 5?

Yes. Azocasein can be used down to pH 4.5 if required.  It is best to first dissolve the Azocasein in water (2 grams per 90 mL) and then add concentrated buffer (i.e. 10 mL of 1 M sodium acetate buffer, pH 5.0) and then adjust the volume to 100 mL.
