We recommend de-fatting the sample prior to the actual analysis as high fat content may affect the performance of the kit. Samples can be defatted with petroleum ether (3 times with 25 mL portions/g test sample) before milling. A loss of weight due to fat removal should be recorded and appropriate correction should be made to final % of resistant starch found in determination.
Is it possible to analyse samples containing fat (e.g. sponge cake) with the Resistant Starch Assay Kit (K-RSTAR)?
