β-glucans from mushroom and yeast have the same chemical structure. Fungal and yeast cell walls are composed of ≤ 50% 1,3:1,6-β-glucan. The 1,3:1,6-β-glucans of several mushroom species have been studied in considerable detail and the most predominant structural feature has been identified as a 1,3-β-glucan backbone with single D-glucosyl residues linked 1,6-β to every third or fourth D-glucosyl unit in the 1,3-β-glucan backbone.
