We have not tested this in our laboratory, so cannot provide a definite answer. 

We would recommend performing extraction in water, as per the booklet.

However you could evaluate if this extraction method with ethanol would work, by analysing the fructan control provided with the kit. If the results for the control come as expected and as stated on the label, there should be no problems with testing your samples using this method.
