Is the fat content a problem for the determination of resistant starch using K-RAPRS (Rapid Resistant Starch Assay) Kit?

Modified on Thu, 24 Mar, 2022 at 9:11 AM

Where fat content is expected to be high we recommend de-fatting the sample prior to the actual analysis as high fat content may affect the performance of the kit (Defat per AOAC 985.29 if > 10% fat).

Samples can be defatted with petroleum ether (3 times with 25 mL portions/g test sample) before drying anf milling. A loss of weight due to fat removal should be recorded and appropriate correction should be made to final % of resistant starch found in determination.
