Can the Ceralpha Alpha-Amylase Assay Reagent (R-CAAR4) be used to analyse the alpha-amylase content of meat?

Yes, animal amylases are usually assayed at pH 6.9 and R-CAAR4 reagent can be used up to pH 6.9.

However this reagent can only be used up to 40C.


If you require a substrate with a higher pH and temperature range you require the R-AMHR4 reagent, which is applicable up to pH 7.5 and 60C
