Can Azo-Barley Glucan (S-ABG100) be used to assay at 65˚C to replicate mash conditions? I understand that the standard curve given in the method will no longer apply but I am mostly interested in comparative results.

You can use Azo-Barley Glucan at 65˚C.  There will be no problems with stability at 65˚C and pH 5.5.  The pH of the buffer could simply be adjusted with 1M NaOH.
