What is the reason why an antibody I have binds differently to the Megazyme product galactomannan than to a native carob galactomannan?

Native carob galactomannan is a crude flour from carob seed endosperms – approximately 30–40% galactomannan.  Megazyme low viscosity carob galactomannan is a pure product.  This may be the reason for the difference.
