The method is not really suitable for chemically modified starches for two reasons. Firstly, chemical modification will alter the solubility and hydrolysis of starch by the enzymes. Secondly, it will interfere with interaction of Con A.
Is it possible to determine the amylose content in chemically modified waxy maize starch using K-AMYL?
