Does ascorbic acid interfere with K-FRUC analysis?

Yes. Based on our observations, ascorbic acid can interfere with the K-FRUC assay and may lead to inaccurate results. The interference is most likely associated with the PAHBAH colourimetric reaction, where ascorbic acid may affect chromophore formation and result in altered colour development.


For samples containing ascorbic acid, we recommend using the K-FRUCHK assay kit for fructan analysis, provided that the sample does not contain high concentrations of glucose, fructose, sucrose, or maltose, as these sugars can impact the suitability of this alternative method.
