There is very little xylanase in malt. We suggest you use the same buffer as recommended (25 mM acetate, pH 4.7). You will need to increase incubation times to 1-2 hours.
Is it possible to assay brewer’s malt for xylanase using Xylanase AX tablets (T-XAX)?
