The resistant starch will dissolve readily in the cold KOH. It is well known that more reliable results are obtained if the dissolution in KOH is done in cold conditions. At higher temperatures, the alkali can cause other reactions with carbohydrates.
How can we verify that the resistant starch has been dissolved completely in KOH after enzyme digestion in the Resistant Starch Assay Kit (K-RSTAR)?
