What is the reason for wetting with ethanol and is it really necessary to dissolve arabinoxylan at 100˚C? We have good experience with dissolution in water at ambient temperature.

The alcohol helps avoid lumping of the polysaccharide when the water is added.  Arabinoxylan can be dissolved at ambient temperature, so if this is what you prefer to do, that is fine.
